Sindhi Curry

Sindhi Curry - (made from chick pea flour and vegetables like lady finger, potato and eggplant) This is one of the signature dishes of Sindhi cuisine and needless to say this had to find its way on this blog sooner or later...

The Ingredients

1. Vegetables (Eggplant,Potatoes,Beans,Carrot,Peas etc. Try to get ladies-finger(Okra) if possible)


2. Tamarind Juice. Around 50gm dry tamarind


3. Fenugreek seeds(methi dana) 1 tbsp


3. Cumin seeds (1 tbsp)


4. Chickpea floor(Besan) around 4 heapfull tablespoons. Serves 5-6 persons.


5. Ginger(small piece), green/red Chilly(as per taste , 1 recommended),Curry leaves,Salt and Oil

The Steps
1. Heat some oil in a Pan,saute cumin seeds,fenugreek seeds,Hing(Asafoetida),chillies and ginger for 2 mins


2. Add the chickpea flour and saute on medium flame


3. Saute till the flour becomes light brown. Ensure that the flour does not burn(become dark brown) due to heat.


4. Add the vegetables and saute for 5-7 mins.(Sometime you can try to fry the vegetables and add them)



5. Add water, around 1.5L,Salt and Tamarind juice and cover the pan and cook untill the vegetales are soft/cooked.



6. Check the consistency of the Curry when the vegetables are cooked. Top it with a 'Tadka' of Oil and curry leaves.Serve hot with Rice.

Naan..

Naan:is a leavened, oven-baked flatbread. It is one of the most popular varieties of South Asian breads.

This one is quite simple but requires some experimentation also.
I would also recommend to follow from here ..

The Ingredients

1. All purpose flour(500gms)
2. Yeast(50 gms)
3. Yogurt(100 gms)
4. Salt,Butter,Oil
5. Sugar/Honey , tbsp

The Steps

1. Put the sugar and yeast in warm water. All the yeast to grow for some time (around 15 mins)
It looks like this




2. Knead the dough with Yeast,Yogurt,Salt and Oil



3. Leave it to grow in a warm place. This will take around 2 hrs depending on the warmth of the room/weather. When it comes up it looks like this




4. take a small portion of dough and make a flat bread in any shape.The dough will be sticky, so use some oil/flour. If you use flour then the Naan will be little dry





5. Pre-heat the oven to 250 degrees celsius and put the bread to bake in there for 3-5 minutes. If you have pizza stone then use that.






6. Take out the bread and apply butter on it,Serve it with any Indian dish
You may cut some garlic cloves and add on top of the bread before baking it to make garlic naan.

Spinach Tomato Lentil soup

Hi All,
This original recipe comes from my kitchen.I could imagine the taste for this soup, so thought of trying it out and it was quite good and filling also.

The ingredients(serves 5-6)

1. Fresh Spinach leaves(around 200 gms)


2. Tomatoes(3-4 medium sized)


3. Boiled lentils(mix 2-3 types of whole lentils)


4. Ginger,Cumin seeds,Butter 1tsp,Oil 1tsp,salt and Coriander leaves

The Steps
1. Boil the tomatoes,spinach ,ginger and salt in a pot with around 1.5 litre of water


2. Turn of the heat after boiling for 15 mins,Cool it off and blend it in a blender. Seive it though and collect the liquid in a pot.


3. Heat the oil and butter in a pan, add cumin seeds and allow to crackle.


4. Add the lentils and saute for 2-3 minutes


5. Add the blended mixture,add salt if required


6. Boil for 5 mins and turn off the heat


7. Garnish with coriander and serve hot.
