French Onion Soup

This is one of the most talked about French soup. This is little sweet in taste. The sweetness comes because of the big quantity of Onions used.I learned this from one my colleague, here in Vilnius.I have modified the recipe little bit for a little different taste.

The Ingredients

1. Onions(preferably white onions, 500 gms and chopped medium sizes)


2. Green Onions(with the leaves, for garnish)


3. Vegetable Stock(below I have used stock prepared from Carrot,Potato,Celery and Turnip


4. 2 tablespoon Oil,1tablespoon Butter
5. Salt,Pepper as per taste,Thyme/Cumin seeds


The Steps
1. Heat 2 tablespoon of Oil and 1 tablespoon of Butter in a pan. Add the onions,saute the onions on a slow flame for 20-25 mins,ensure that the onion do not get burned. Cover the Pan with a lid



2. Allow it turn light brown without getting burned.Add some cumin/thyme seeds for flavour


3. Move aside the white onions and Saute the green onions in the Pan using the oil in the pan(or you may saute green onions seperately and mix)


4. Add the vegetable stock and boil for a few minutes. Add the stock as per the consistency of the soup required.


8.Add Salt,Pepper as per taste,without these the soup tastes sweet.Serve Hot

Zucchini Raita

Raita:Curd/Yogurt mixed with Vegetables,fruits etc. Seasoned with some mild spices and Salt.

The ingredients

1. Grated Zucchini or a cucumber
2. Plain yogurt/Curd(Rugpeinis, I prefer here in Lithuania)
3. Salt,Perpper and Jeera(Cumin) powder

The steps
1. Grate the zucchini


2. Mix it with Curd and water(if required)
Add the salt,peper and Cumin powder add let it refigerate. Serve cold with Indian bread or rice...

Palak Paneer

Palak Paneer: Roasted Onions,Tomatoes with spices, blended with Spinach and lots of cottage Cheese. Thats how we have Palak paneer.
It is quite a simple and a good recipe.
Preparation time: 40 mins

Here we go, The ingredients are good enough for a serving for 5-6 persons.

The ingredients

1. Chopped Onions( 2 medium sized)


2. Ginger(a small peice,)Garlic(2 cloves) and Chilli(1 piece or none as per taste)



3. Tomatoes(2-3 tomatoes), chopped


4. Tomato Puree( 100 gms, optional, add this to make it less spicy)


5. Whole spices(Cinnamon,bay leaves(laura lapai),Black Cardamom,Green Cardamom and Pepper). These are for adding some flavour to the dish, if you are not able to get any of them or some..then also its fine.


6. Paneer, Cottage cheese ,Varshke Suris(Lithuanian, 22% fat,I prefer the Optima brand). We will need around 250 gms for 5-6 people


7. Spinach(fresh or frozen), 200 gms


8. Grounded Spices(Turmeric,Coriander)optional, Red pepper/Black pepper(as per taste), Salt as per taste, Butter,Peas(optional)

The Steps
1. Heat some oil(around 3 tablesppon) in a pan.Saute the spices(cadamom,bay leaves,etc) for 2 mins on medium flame. If you prefer, you may remove these from the oil now to make it less spicy.


2. Add Onion and Saute for 5 mins on medium flame . Add Ginger,Garlic and chillies,saute for 5-10 mins, untill the onions turn golden brown.


3. Add the tomatoes to the mixture, Saute for 5 mins. Add the grounded spices and Salt. saute for 5 mins


4. Cool it off, and blend it in a mixer/blender with some water(100 ml)


5. Boil the spinach leaves in hot water and salt for 10 mins


6. Let is cool and blend in the mixer with some water to get a puree. Also you may blend it with the above onion-tomato mix.




7. After blending the Spinach, heat some butter in a Pan, mix the Spinach and Onion-tomato puree in the Pan.add water if required.Add the green peas if you want(boil it longer for 5 mins so that the peas become soft). Put in the Paneer/Cottage Cheese cubes. Let it boil for some time.


7. Garnish with some grated Paneer/Cottage cheese.
Serve hot..(The paneer/cottage cheese is hard sometimes if the dish is not served Hot).


You can have it with Indian Bread(Roti/Naan) or Rice.

Beetroot and Celery soup

I picked up this recipe on my recent visit to an Indian vegetarian restaurant in Prague(Czech Republic),Maitrea.
The soup was very simple and very healthy. So I ensured that I try out my version of it.
Here we go

The Ingredients (serves 4)
1. Beetroot (1 medium sized diced)


2. Chopped Cabbage


3. Celery( 2 stalks, chopped)


4. Peas,Salt,Pepper,Lemon juice and Butter

Steps

1. Just put all the vegetables to boil with 1 litre of water. Boil for 15 mins on medium flame


2. Add salt,Pepper and lemon juice as per taste.
Garnish with Butter and serve hot..!!
